Jane Coyne smiled as she unknowingly peeled away the speckled shell of the boiled quail egg and shoved it into her mouth.

Throughout the dinner, her longtime friend, Khanh Nguyen, had urged her to try the Vietnamese delicacy. So eventually, Jane gave in. In South Vietnam, duck and quail eggs, also known as Balut or Trung vit Lon, are a popular snack or appetizer. But unlike the boiled chicken eggs eaten in the United States, these include a partially developed chick, feathers included, inside.
