The close of the American Civil War opened a new era for the cattle industry. Both beef and pork were on the menu as mainstays in the daily provision of soldiers on both sides of the fight. The meat was often salted for preservation and easy distribution, but the military preferred fresh meat for their fighting men. Cattle and hogs were regularly driven by civilian drovers supporting the campaigns.
