Growing up on a farm near Dighton, Caleb Schultz learned first-hand the uncertainty of agriculture. That sometimes, it’s a roll of the dice. In a good year, cattle were fat, and wheat yields doubled the previous year’s totals. But if young calves died, or a late freeze killed tender stalks, profits would take a significant hit.
